Asian Inspired Menu @ the Lake

This past weekend we had the opportunity to serve a bride-to-be and 9 of her closest friends at a cabin in McHenry, MD.  We were just a 5 minute drive from Deep Creek Lake and summer fun was in the air. Unfortunately, rain was in the forecast forcing their dinner plans from the deck to the screened-in porch but it certainly didn't do anything to dampen the mood of the party.

The girls wanted an Asian-inspired menu from scratch and Chef Teddy delivered.  The first course was a blue crab summer roll on a bed of home-grown heirloom tomatoes and topped with some edible flowers right from Chef Teddy's garden.

After this tasty appetizer, we moved right into an Asian salad.  Now, I know it might not sound delicious to some, but this seaweed salad with thinly sliced carrots and cucumbers was marinated to crispy perfection.

I loved the family-style option that these girls chose.  They wanted to share one final evening together before their best friend got married.  With her wedding only six weeks away, the girls took the opportunity between courses to share stories and toast the bride.

At about 8:30pm it was time to bring out the main courses - first were the Korean Glazed Short Ribs that we taste-tested just a few Tuesday nights ago.  I think they were even better the second time around.

The next family style dish was the highlight of the evening.  Chef Teddy grilled some Miso Glazed Cod and placed it on top of a Soba Noodle Salad.  The fish would fall apart as soon as your fork touched it and continued to melt in your mouth.

As the evening drew to a close, we started cleaning up the table as the girls started to scatter throughout the house.  They were planning to continue the party well into the night but we had one more surprise for them before heading home.  

One of the girls harvests honey from her family farm in MD and she had brought a jar for the Bride-to-Be.  We were able to use that jar of honey as part of a sauce for an impromptu dessert.  Our contribution to the night ended with these freshly-baked brownies and a fresh berry and honey sauce that could not have been more perfect for the sweet girls who trusted Clean Slate Catering with their big event.
